In this episode, Ukrainian chef Olia Hercules invites us into her kitchen to learn two recipes inspired by the culinary traditions of Ukrainian summer kitchens.

First, she prepares roast chicken with garlic and herb creme fraiche, coating the inside and outside of the poultry with herb creme fraiche which adds flavor and helps to brown the skin.

Next, she bakes a ricotta and semolina cake with caramelized apples, a cake-cheesecake hybrid topped with a layer of silky, buttery, golden apple.
